Green Beans Almondine Recipe

Green Beans Almondine has buttery almonds on delicate sautéed beans. This lovely, simple French side dish is excellent.

– 16 ounces fresh green beans washed and trimmed – 2 tablespoon butter – ⅓ cup slivered almonds – 3 cloves garlic, minced – ¼ teaspoon red pepper flakes (optional) – 2 teaspoon freshly squeezed lemon juice – Salt and pepper to taste

Boil water in a large pot over medium-high heat. Make an ice bath by filling a big bowl with water and ice.

INSTRUCTIONS

Boil water in a saucepan, then add beans and cook for 3 to 3 ½ minutes. Cook thin French-style beans for 2–3 minutes. To stop cooking, remove the beans with tongs and place them in the ice bath.

Step 2

Melt butter in a large skillet over medium heat. Add slivered almonds to heated butter and sauté for 3 minutes until golden brown. Continue cooking 30 seconds with garlic and red pepper flakes.

Step 3

Add sieved green beans to the pan. Coat in butter and sauté one minute to warm. Season with salt and pepper and lemon juice. Serve now.
